Description
“Legit” Cabernet Sauvignon – dry red wine made from Cabernet Sauvignon grapes, which is grown in the Chianti Classico zone mainly on sandy soils, as well as tuff. The vines that produce the crops for Lejit were planted in 2002. The grapes are sorted twice: first in the vineyard at the time of harvest, and then using an optical sorter at the winery. After peeling the stems, the berries are immediately placed in French oak fermenters. The temperature during alcoholic fermentation is strictly controlled by the computer, the wort is in contact with the skin for about 30 days. Hand-made pijage and repairs are done every 4-6 hours, and delestage is done once a week. Malolactic fermentation, like aging of the wine for 24 months, takes place in French oak barriques, 70% of which are new. After bottling, the wine “rests” in the cellars of the winery for at least 36 months.
