Despite the fact that the first vintage Simonsig, Sauvignon Blanc was released in 1978, only in the last decade wine beginning to demonstrate a variety of colors and realize their potential. After research terroir and clonal selection, on the steepest slopes of the economy at an altitude of 250-208 meters were planted new vineyards with Sauvignon Blanc. The result of this work are of excellent quality fruit crops with amazing flavor.
Collection Sauvignon Blanc is held early in the morning cool on the basis of taste testing and tracking the development of flavor. Part of the grapes was left for some time in contact with the skin. A new way of pressing and separating the juice has led to greater elegance and refinement of wine. Fermentation was carried out at a sufficiently low temperature at 11-12 C. After fermentation, the wine is aged on the lees for 3-6 months with regular stirring.

Simonsig wine estate owner, located in the northwestern part of Stellenbosch, is family Malan. The estate noble grape varieties are cultivated and produced some of the best wines of South Africa.
