Wine “Figaya” from Serafini e Vidotto is the so-called second wine farms, its name translates as “the perfection of the earth.” Wine comes from a combination of three excellent varieties of grapes – Merlot, Cabernet Sauvignon and Cabernet Franc. The wine is produced since 1994. Vineyards from which harvested are the southern and south-eastern exposure and are located at an altitude of 100-200 meters above sea level, on a mountain, rocky soil. Age of vines varies from 8 to 35 years. Merlot crop harvested in late September, and Cabernet – in mid-October. The fermentation process is carried out in stainless steel vats their temperature is not controlled. The duration of fermentation and maceration is 8 to 10 days, followed by malolactic fermentation process, 12-15 month aging in oak barrels (barriques recycling of 225 liters) and extract directly in the bottle for a period of 10 to 12 months. Annual production rather impressive – 40-50 thousand bottles of wine.
In the XI century near the small Italian town of Nervesa della Battaglia was founded by Benedictine monastery Abazia di Nervesa, monks are engaged in viticulture and winemaking. In 1986, two friends – Francesco Serafini and Antonello Vidotto – decided to revive the ancient monastery winery. They are not just dropped off the best grape varieties, using traditional farming methods. Procured old documents and maps, Serafini and Vidotto began to recreate the landscape that this place was in those days. This affected not only architecture, but also vineyards. Serafini and Vidotto trying to improve crop quality, engaging in the development and selection of local vines. This long and complex process is still ongoing.
