The vineyard Kriot-battery-Montrachet Domain belongs to a tiny plot of 0.05 hectares of vines which were planted in 1975. In the mid-90s, Olivier Lamy began a bold experiment to increase the density of planting vines in some areas. So, in the vineyard Criots-Batard-Montrachet, it reached 20,000 vines / ha. 3/5 plot were left old vines, and the rest was planted young. The question “what he learned from this experiment?” Olivier said that the grapes in such conditions usually matures a bit faster and has a better natural acidity level.

Today Domaine Hubert Lamy – a modern three-storey winery, which is practiced gravitational method of winemaking, ie, excludes the use of mechanical means. All movements fault occur under the influence of gravity, which makes the wine more fineness and texture. Olivier loves experiments – he moved to the 600-liter tonne instead of 225-liter barriques, because, in his opinion, it will save the purity of fruit flavor from excessive aging in oak wood. Now almost all the wines are aged in these containers. Lamy is committed to providing exquisite and colorful wines that have emphasized natural mineral terroir St Aubin. In the year produced less than ten thousand boxes of each wine.
