Description
Raats, “Original” Chenin Blanc is a fresh, dry white wine made from Chenin Blanc grapes grown in the company’s vineyards in the Stellenbosch region. The average age of the vines reaches 35 years. The soils are mainly granite-sand. Harvesting is carried out in three stages from mid-January to mid-February to ensure optimal ripeness. Vinification for grapes from different types of soils takes place separately, since berries grown on granite soils add a mineral character and calcareous notes, and berries from sandy soils give them structure and bright fruitiness. The juice settles for 2-3 days, followed by cold maceration at a controlled temperature of 14-16 C in steel tanks. The wine is aged on the lees for 6 months before bottling.
