Description
“Cielo d’Ulisse” Brunello di Montalcino DOCG, 2018 is a beautiful and deep wine made from Sangiovese, one of the most prized grapes in Italy. The vineyards are located on the western slopes near the Ombrone River and are surrounded by woods. This ensures that they can withstand warmer seasons, such as 2018, allowing the wine to retain its dynamism. The harvest is done in the traditional way, by hand, in wooden boxes of 18 kg, and then the grapes are delivered directly to the cellar. Vinification involves fermentation in large open barrels for 40 days. Most of the vinification process (80%) is accompanied by regular pumping of the must, and the remaining time is practiced by the so-called “Piemontesino” method, when the extraction is passive. The wine is aged in oak barrels for 28 months, then transferred to cement vats for 14 months for maturation.
