Description
Pinot Noir, Elgin – dry red wine made from Pinot Noir grapes harvested from vineyards economy Gender Kluwer. Harvesting is carried out in mid-February, early in the morning. Winery berries are sorted and gentle grinding. Cold maceration temperature is held at 12-14 C for 4-5 days. Fermentation is carried out naturally, after which 80% mash selected yeasts are added to the remaining 20% continue to ferment naturally. During the fermentation 2-3 times daily carried manually or mechanically punching the caps. Malolactic fermentation takes place in French oak barrels (15% – new barrels and the rest of the second, third and fourth use). Wine is aged 11 months on the lees in oak barrels.
