Description
Novaia, Valpolicella Ripasso Classico Superiore DOC – red dry wine with rich, tasteful and very fragrant bouquet. Produced by a traditional technology for the Veneto “Ripasso” (translated from the Italian – “repetition”), providing for re-fermentation by the addition of grape marc for Recioto and Amarone in the already fermented for 7-8 days, must Valpolicella. This method adds to the complexity of the wine and enriches the flavor. After re-fermenting wine aged 12 months in the barrel, and then – still 4 months stored in a bottle.
