Description
Italo Cescon, Merlot, Piave DOC – a complex red wine, created from the same grape that grows on the vineyard in the commune of Fontanelle Piave. Harvesting is carried out in the third decade of September. Predfermentatsionnaya maceration takes place at a controlled temperature of 5 C for 5 days. Traditional maceration lasts 10 days. Alcoholic fermentation takes place in stainless steel tanks at controlled temperature of 21-22 C. Matured wine 9 months in oak barrels, followed by 4 months in bottles in the cellars of the winery. Merlot wine from Italo Cescon perfectly combined with meat sauce for pasta, grilled veal, duck with orange sauce and semi-solid cheeses.
