Description
“Mara” Valpolicella Ripasso Superiore is an excellent red wine with an intense aroma and a warm, velvety taste. This wine – the embodiment of years of experience of winemakers Gerardo Cesari and ancient technologies of Italian winemaking. Not all wines can so clearly express its history, terroir and technology creation, as “Mara”.
The method of production of wine “Mara” interesting and unique. Technology “Ripasso” provides secondary fermentation of wine with the skins of grapes used to create great wine Amarone. In January of the following year after harvest grape pomace from the production of Amarone are added to the wort is fermented and 15-18 days. In February and March produced malolactic fermentation, resulting wine is saturated with flavor, strengthens the structure acquires a deep color and soft tannins. The level of alcohol is increased to 1-1.5%. At the end of fermentation, the wine aged for 12 months in barrels of Slavonian (80%) and French oak (20%). Additional aging in bottles in winery cellars lasts almost 6 months. This wine is very similar to Amarone, but it is not as powerful and more democratic in pricing.
