Description
“Lo Scudiere” (“The Squire”) is a tribute to the outstanding “knight”, the pioneer of Sangiovese in Bolgheri, Cavalier Michele Satta , of whom Fabio Motta was a student. But he made this single varietal Sangiovese wine not only out of gratitude, but also out of conviction, matured with experience. After working with Sangiovese for ten years, Fabio finally decided to produce it purely. Sangiovese has its own expression of great value, even in Bolgheri. Not only is it a vine of the Tuscan tradition, but it is also the most complex grape, and at the same time the most exciting. Cool summers and large temperature changes allow for the production of grapes of exceptional quality. The grapes are harvested exclusively by hand and immediately sent to the winery. During maceration, Fabio uses the stemmed portion of the grapes, which varies depending on the vintage. Fermentation of the wort takes place in large truncated oak vats; maceration on the skins lasts more than a month. The wine is aged in old French oak barriques and takes at least a year.
