“Lota” – a legend, the wine “icon”, the flagship winery Cousino-Macul. The project “Lota” started in 2003, when the family decided to Cousino in honor of the 150th anniversary release wine world class. “Lota” combined the two family passion: coal mining and winemaking. These lines of business Cousino family were laid in the XIX century and became the starting points of the traditions and history of surnames. “Lota” – this wine, which merged elegance and loyalty to the ideals of family, backed by the efforts of world-class professionals.
In 2007, the harvest of red grapes on the farm Cousino-Macul began in late March and stretched until the beginning of May. However, thanks to the warm and dry weather managed to get grapes high degree of maturity and quality. Harvesting is done by hand, carefully putting the grapes in boxes. In the cellar the grapes was another selection, the best grapes were placed under a press to extract juice. Grape juice was decanted 7 days at low temperature and then placed in a large drum to undergo fermentation for 12 days. Each variety is fermented separately, in different temperature regimes: Merlot – at 25 C, Cabernet Sauvignon – at 27 C. Thereafter, the wort is subjected to maceration during 18 days. Passing malolactic fermentation, blending placed in French oak barrels for aging for 15 months. The whole process of wine making took place under the strict supervision of oenologist to get the highest quality product.
Winery Cousino-Macul Maipo Valley is in, in the village of Macul, and traces its history back to 1564 yet. While Macul estate owned Spanish conquistador Juan Zhufre. The name of the estate – Macul – in the language of Quechua means “right hand”. In 1856, Mathias Kousino bought the estate and created his own wine company Cousino-Macul. The company is still under full control of the family Kousino and has been manufacturing world-class wines, which incorporates distinctive character Maipo Valley.
