Description
“Aszu” – line of high-end wines created from berries such as “Aszu” based on ancient centuries-old traditions. The term “Aszu”, literally translated as “dry”, today is associated with a type of wine made from botrytised zaizyumlennogo grapes, that is slightly dried grapes, processed noble botrytis. These berries are picked by hand, one by one, in a special basket called “Puttonosh” or “Puttonen.” Baskets are the unit of measurement of the amount collected berries, the average basket can hold 25-30 pounds slightly dried berries. The higher the value “Puttonosh” in the name of wine (on a scale of 3 to 6), the wine turns richer and sweeter.
Technology of production of wine Tokaji “Aszu 5 Puttonyos” is: berries develop in huge vats, where for a week under its own weight of grapes it implies part juice. This essence is drained and the remaining grapes are pressed and added to the already finished dry wine basis. Fermentation is done in stainless steel vats. Fermentation “Assou 5 Puttonosh” lasts 2 months, after which the wine is aged for at least 2 years in oak barrels from the Bulgarian Earth and 1 year – in bottles.
Chateau Deresla, which since 2000 has owned the family d’Olan from Champagne, amazing location – in the heart of the legendary Tokay vineyard, which stretches over 5,000 hectares around the small town of Tokaj in eastern Hungary. Cellars winery located in the most beautiful caves carved in the rocks. Renovated in 2003, they can withstand the wine in the tradition and at the maximum correct mode of temperature and humidity. Chateau owns 60 hectares of vineyards. Soil area consists of clay and loess (sedimentary rock) with a lot of volcanic and sedimentary elements. The average age of the vines is 35 years. The farm cultivated three autochthonous grape varieties: Furmint, Harshevelyu and Muscat. In 2007, was completely renovated and modernized the old winery and built a new plant for processing of raw materials and logistics center.
