Description
Case Paolin Costa degli Angeli – a dry white wine from grapes Manzoni Bianco. The vines are grown on the slopes of the hills of Montello, in the north of Treviso. His name was sort of in honor of Professor Manzoni, a distinguished Italian oenologist. It was through his experiments originated hybrid of Pinot Blanc and Rhine Riesling. Grapes Manzoni combines recognizable elegance and finesse of Pinot Riesling.
Assembled by hand in mid-September, the berries neatly stacked in wooden crates and sent for recycling. Vinification takes place without oxygen. The must remains in contact with the skins of grapes for 12-15 hours. Fermentation takes place with the addition of selected yeast cultures, which continue to be in contact with the wine during the 8 months of exposure.
