“Cape Heights” Pinotage is a South African dry red wine made from Pinotage grapes grown in the company’s vineyards in Swartland on rich granite and shale soils. The climate here is hot and dry, which significantly reduces the risk of spreading fungal diseases, and the lack of water in the soil leads to a decrease in yield and, accordingly, to obtain more juicy, concentrated berries. Harvested at optimum ripeness to provide juicy fruit notes and soft tannins, the grapes are crushed and fermented in stainless steel tanks at 17-22 C. The alcoholic fermentation process is accompanied by pumping the wort at least 2 times a day in the active phase and 1 time a day as the fermentation is completed. Fermentation stops when 5 g / l of residual sugar is reached, followed by pressing, which ensures that there are no overly harsh tannins. At the end of malolactic fermentation, the wine is kept on the lees before bottling. The freshness and purity of the wine are preserved thanks to the screw cap, due to which the wine does not undergo “cork disease”.
