  • Antinori family acquired the Castello della Sala in 1940. This castle of medieval military architecture is located about 18 km from Orvieto. Cool climate of the region is ideal for the production of white wines and wines from Pinot Noir. First vintage “Bramito del Cervo” was produced in 1994.
    Chardonnay for “Bramito del Cervo” is grown in vineyards located at an altitude of 200-400 meters above sea level, on soils composed of marine sediments and clay minerals. Harvested berries are cooled in special tanks maintained at a temperature of 10 C to preserve the characteristics of the variety of grape. After several hours of contact with the skin of the berries are placed in French oak barriques Allier and Tronkays, which produced alcoholic fermentation and malolactic fermentation. Excerpt wine, partly in oak barrels, partly in stainless steel tanks, lasts about 5 months.
