Description
White wine Cavalchina, Custoza Bianco created from four grape varieties – Garganega, Fernanda (clone Cortese) and Trebbiano Trebbyanello (clone Tokai). Each of these varieties is hand-assembled at different times – from early September to late October. Processing takes place in the same grades separately: berries are separated from the ridges are compressed, purified and sent for fermentation at 18 C for 10-15 days. Cold maceration procedure before compression takes place only one of the varieties blend – Fernanda. Fully formed becomes wine after aging on the lees and Assemblage in January-February next year.
Winery Azienda Agricola Cavalchina was founded at the beginning of the XX century, together with the purchase of a family Peony first vineyards in the village of Custoza in Soave. Pretty soon, wine Cavalchina acquired fame and popularity, and winemakers Peony was decided to call the wines of the region of origin – Custoza, Soave and not, as it was until now.
The philosophy of production on the farm Cavalchina is based on three pillars – the local terroir, meticulous care of the vines and a perfect vinification. Grape varieties are selected in accordance with the climatic and soil conditions, but yields consciously remains low – so the berries remain healthy and juicy. Therefore wine Cavalchina quite rare, but always great.
