Description
Mukuzani – protected geographical indication wine region of Kakheti. Saperavi grape variety from which the wine is produced, purchased from winegrowers in mukuzanskoy micro-zone on the right bank of the river Alazani. The grapes are harvested by hand at the peak of maturity. After gentle destemming and crushing the grapes fermented for 12-15 days in stainless steel tanks at controlled temperature (23-28 C) using the cultural yeast. Used delestazh and remontazh. Then the wine is separated from the sediment and placed in 225-liter oak barrels to undergo malolactic fermentation and subsequent aging for 9-12 months. The second phase of aging wine takes place in steel tanks and the third – in the bottles after bottling.
